Sunshine Salad

Our days of sunshine for this year may be numbered but that doesn't mean we should have to do away with summery salads just yet! The great thing about this salad is that it's very easy to throw together and you can make as many or as few substitutions as you like. Enjoy!

Ingredients

1 portion of Leaves Pasta with Benefits

1/4 cup diced cucumber

1/4 cup diced strawberry

1 tablespoon desiccated coconut

1 tablespoon extra virgin coconut oil/neutral flavoured oil

Pinch of fine finishing salt

Optional--

Dried (or fresh) organic rose petals - I picked mine from my garden.

Any combination of nuts and/or seeds :) - I used sliced almonds.

Directions

1. Cook Leaves Pasta with Benefits according to packet directions. Ready in 5 Minutes!

2. Dice some cucumber and strawberry and make sure you have your other ingredients ready.

3. Toss pasta in a little melted extra virgin coconut oil/neutral flavoured oil. *If using coconut oil, remember that it will solidify as it cools. If you overdo it, it will create a waxy layer on your pasta, but get it just right and it will give a lovely coconut flavour! If in doubt use a light flavoured oil instead :)

4. Allow the pasta to cool to room temperature and add the cucumber, strawberry, desiccated coconut, seeds/nuts and salt to taste.

5. Toss well and sprinkle with organic rose petals.

Best served straight away.
