With Christmas just around the corner here are some enjoyable and tasty ways to use up your leftover turkey!
Turkey pasta salad with basil-mint pesto and lemon zest
Boil our Leaves’ Penne with garlic for just 5 minutes. In the meanwhile put basil, mint, olive oil, lemon juice and salt and pepper to taste in the blender to make your fresh pesto. When the pasta is ready, mix in the pesto, your leftover turkey and top with a bit of lemon zest. Enjoy!
Pasta with Turkey ragù: a bolognese-like rich turkey and tomato sauce
Over medium heat, pour a touch of olive oil on a pan, then add some chopped onions and garlic. At this stage you can also add a dollop of Irish butter for more flavour. When golden add a few chopped carrots, mushrooms and celery, sprinkle with salt and let cook for about 5 minutes. At this point add the tomato sauce, with salt and pepper to taste. After 5 more minutes, when the sauce starts getting thicker, add your leftover turkey. Put Leaves’ Fusilli in salted boiling water and let the sauce cook until pasta is ready, which is just 5 more minutes. Drain the pasta and add to the sauce. Buon appetito!
Turkey, broccoli and almonds pasta bake
Cook Leaves’ Elbows with sage for just 4 minutes (they have to be slightly under cooked as they will finish cooking in the oven). In a bowl mix in the pasta with the turkey leftovers, broccoli florets, chopped almonds and double cream. Pour in an oven safe deep tray and grate your favourite cheese on top (we love it with Gubbeen!). Bake for about 20 minutes at 180°. When ready let rest for other 10 minutes and enjoy while still warm. Spectacular also the day after!
